4 cups all purpose flour
2 teaspoons salt
1 tablespoon baking powder
2 teaspoons baking soda
1 cup cold butter, cut up
1-1 1/2 cups buttermilk (I used the 1 1/2 cups)

Preheat oven to 400. Sift together the flour, salt, baking power, and baking soda. Cut in the butter until mixture resembles coarse crumbs. Make a well in the center and add 1 cup of buttermilk. Using your hands gently fold the dry ingredients into the buttermilk until a sticky dough forms. Add more buttermilk if needed. Do not overwork. Turn out dough onto floured board. Gently knead folding dough over itself 3-4 times (this becomes layers). Press dough out 1 - 1 1/2 inches thick. Cut with a 3-inch cookie cutter or cut into squares and lay on an ungreased cookie sheet. Brush the tops with the buttermilk or melted butter. Bake for 15-20 minutes or until golden brown. Makes 12-15 biscuits. Serve hot with butter, honey or jam.
