Candied Sweet Potatoes

4 large sweet potatoes
1/2 cup margarine
3/4 cup brown sugar, packed
2 cups marshmallows
Servings: 8
1. Peel and cook sweet potatoes in salted water until done (don't overcook).

2. Lift out of liquid with slotted spoon and place in a buttered casserole dish.

3. Boil liquid with margarine and brown sugar added until slightly thick (like syrup).

4. Pour over potatoes and bake for 30 minutes or so at 350 degrees.

5. Take out and put on marshmallows. Return to oven until marshmallows are brown on top. (Can be placed under broiler but watch closely. Take seconds to brown).
