2 pounds red potatoes, parboiled
2 tablespoons oil
1/2 cup bread crumbs
1/4 cup green onions, chopped
Servings: 8
Dice potatoes. Sauté in oil until lightly brown; add bread crumbs and cook until well browned. Add green onions and sauté for 2 minutes.
