4 oranges large
4 carrots large, shredded (about 4 cups)
1 1/3 cups coconut flaked
1 cup dates chopped
1/2 cup sour cream
1/4 cup honey
Bibb lettuce

Peel oranges. Remove sections and cut in half; place in a large bowl. Add carrots, coconut and dates.

In a small bowl, stir together sour cream and honey. Gently stir into carrot mixture to coat all ingredients. Cover and chill for 1 hour.

Drain carrot mixture and spoon onto lettuce leaves,
