1 pound margarine
6 ounces all-purpose flour
1 gallon milk
6 pounds ham, cooked
salt, to taste
1/2 teaspoon white pepper
Servings: 50
1. Melt margarine. Add flour and stir until smooth. Cook 5 minutes.
2. Add milk gradually, stirring constantly with wire whip. Cook until thickened.
3. Cut ham in cubes or grind coarsely. Add to sauce and heat slowly for about 20 minutes, or until internal temperature reaches serving temperature (170-180°F). Add salt, if needed, and pepper. Serve 4 oz ham over biscuits, toast, spoon bread, corn bread, or baked potato.
