Makes about 2/3 cup/150ml/1/4 pt
3 tbsp/45ml olive oil
2 tbsp/30ml double cream
2 tbsp/30ml red wine vinegar
1 tbsp/15ml Dijon mustard
½ tsp/2.5ml dried thyme
1 ½ tsp/7.5ml soy sauce
salt and freshly ground black pepper
Put the olive oil, cream, vinegar and mustard in a small bowl. Stir with a fork or whisk until the
mixture is just foamy. Stir in the thyme, soy sauce, salt and pepper
