9 oz powd. sugar
0.5 oz cornstarch

20 oz creme fraiche
8 oz cream

~2 oz eau de vie
~1 Tbsp vanilla
=Whisk together 1., warm 2., mix 1. and 2. together, cook in double boiler until thick.
Add 3., pour into cups and let set. Top with sugar and caramelize.
Fresh fruit, etc can be put into cups before the custard is added.
