1 medium pumpkin, seeded
1 onion, chopped
2 tbsp. oil
1 1/2 to 2 lbs. ground beef
2 tbsp. soy sauce
2 tbsp. brown sugar
1 4 oz. can sliced mushrooms, drained
1 can cream of chicken soup
1 1/2 cups cooked rice
Decorate pumpkin as jack-o-lantern using permanent marker. Saute onion in oil. Add ground beef. Cook until brown stirring frequently; drain. Mix in soy sauce, brown sugar, mushrooms and soup. Simmer for 10 minutes stirring occasionally. Stir in rice. Spoon into pumpkin shell, replace top.
Bake at 350F for 1 hour or until pumpkin is tender.
Use pumpkin as a centerpiece - serve from pumpkin, using cooked pumpkin as vegetable.
Yield 6 servings.
