1 pint Dirty Rice, see separate recipe
1 pint Orange Gastrique, see separate recipe
Yield: 4 servings
1. Prepare Duck Confit as described in the preceding recipe.

2. Reheat the duck pieces in a convection oven for service. Arrange the duck over a mound of Dirty Rice surrounded by Orange Gastrique. Garnish with fresh herbs.
