2 Tbsp herbed garlic butter
2 Tbsp wine - white
4 pc potato - red 'c'

=Boil potatoes, level and scoop middle, keep warm. Saute escargot in garlic butter over low heat until garlic is golden brown, deglaze with wine. Saute spinach for 30 seconds, plate. Place potatoes on spinach, top with escargot and sauce.
