Hearty Wheat Sandwich Rolls

1 1/4 cups all-purpose flour (1 1/4 to 1 3/4 cups)
1 package Fleischmann's® Rapid Rise Yeast
1 teaspoon salt
1 1/2 cups water
1 cup 100% bran
2 tablespoons margarine, softened
1 tablespoon honey
1 1/2 cups whole wheat flour
Cooking spray
1 egg, lightly beaten
Grated Parmesan cheese, optional
Servings: 6
1. In large bowl, mix 1 cup all-purpose flour, undissolved yeast and salt. Heat water, bran, margarine and honey until very warm (125º to 130ºF); stir into dry ingredients. Mix in whole wheat flour and enough remaining all-purpose flour to make soft dough. On lightly floured surface, knead until smooth and elastic, about 4 to 6 minutes. Cover; let rest on floured surface 10 minutes.

2. Divide dough into 6 equal pieces. Roll each to 4 × 6-inch oval. Roll up tightly from short ends. Pinch seams to seal; taper ends. Place rolls, seam-sides down, on large baking sheet sprayed with cooking spray. Spray rolls with cooking spray. Cover; let rise in warm, draft-free place until doubled in size, about 20 to 30 minutes.

3. With sharp knife, make 3 diagonal slashes, 1/4-inch deep, on each roll. Brush with egg and sprinkle with cheese, if desired. Bake at 400ºF for 20 minutes or until done. Remove from sheet; cool on wire rack.

Yield: 6 Rolls
