Ladybug Surprise Zucchini Bread

3 eggs
1 cup oil
2 teaspoons vanilla
3 tablespoons cinnamon (3 to 5 tablespoons)
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1 1/2 cups sugar
1/2 cup brown sugar
3 cups flour
3 medium zucchini, grated
1 cup chopped nuts
Water, as needed
Servings: 16
1. Combine eggs, zucchini and oil. Add baking powder and soda, spices and sugars. Beat thoroughly until all lumps are removed. Add flour. Mix well. Add nuts. Mix well.

2. Spoon into 2 greased bread pans. Bake at 300ºF for 1 hour or more. Test with toothpick.


Yield: 2 loaves
