5.5-6.0 oz lamb filet

aluminum foil

spinach/chevre filling
white wine demi-glace
=Cut lamb filets ~1.5 inches in length, put side by side and wrap with bacon (not tight), then foil.
Sear top & bottom well in pan, let rest. Remove foil and finish in oven.
Serve a bed of creamy spinach/chevre mix with wh. wine demi-glace.
