Lemon Tartlets

1 3/4 pounds Basic Nougatine (Sesame Seed Variation)
1 1/4 pounds Lemon Curd
2 pints Fresh blackberries (dry pints)
Gold leaf, as needed
Yield: 40 Tartlets
1. Lightly oil 40 small tartlet pans or petit four molds.

2. Roll the Sesame Seed Nougatine very thin. Cut it into circles the size of the tartlet or petit four molds. Line them with the nougatine. Remove the shells from the molds as soon as they hold their shape before being filled with the curd.

3. Pipe chilled Lemon Curd into the nougatine cups.

4. Place a blackberry in the center of the cream.

5. Garnish each blackberry with a small piece of gold leaf.

6. Yield: 40 Tartlets, 2 In.
