Mandarin Pork Roast

2 pounds boneless top loin roast
1/4 cup orange marmalade
1 8-ounce can Mandarin oranges, drained
Servings: 6
Place roast in shallow pan, coat with marmalade and place in preheated 325ºF oven. Roast until meat thermometer reads 155-160ºF. Let roast rest 5-10 minutes before slicing. Garnish servings with mandarin oranges.
