Mango Salsa

2 1/2 cups mango, chopped
1/2 cup jicama, chopped
1/2 cup sweet red pepper, chopped
1/4 cup cilantro, chopped
1/2 cup red onion, chopped
1 jalapeño chile (1 to 2), seeded and finely chopped
2 limes, use the juice of (about 2 to 3)
Add salt to taste
Servings: 10
Combine all ingredients, cover and refrigerate for at least 30 minutes to blend flavors.


Yield: 2 1/2 cups
