1 sheetpan 0.75 in square croutons
0.5 lb butter - melted

3.5 qt milk
3.5 c sugar
1 c sugar roux

28 eggs
zeste lemon
6 oz rum
2 oz kahlua
2 caps vanilla
1 c almonds - sliced and toasted
1 c craisins - soaked in rum
=Toss croutons with melted butter. Sprinkle well with sugar, brown in oven.
Mix milk and sugars and heat till hot, lightly whisk eggs and whisk in hot milk. Soak croutons in milk mix 15 minutes, bake in an ovenproof casserole in a shallow waterbath, 350F appr. 1 hour 15 minutes. Do not overbake, just until all liquid is set.
