20 oz pinenuts - toasted & chopped
2 Tbsp cornstarch
2 tsp baking powder

16 yolks
1c sugar

16 whites
1c sugar
=Combine first three ingredients in a mixing bowl, toss to mix. Blanche yolks and sugar till light and thick. Mix nuts and yolks. Whip whites till soft, add sugar while whipping, take to firm peaks. Fold into yolk/nut mix.
Butter then flour a jelly roll pan, gently fill with mix.
Bake at 375F 15-18mns. Let cool 5 minutes, invert onto a lightly floured cloth.
When cool, spread with sweet whipped cream, roll. Slice and serve.
