1½ pound Pork, Boneless
1 pound Carrots, Peeled & Chopped
2 pound Potatoes, Halved
1 medium Onion, Cut Into Serving Pieces
1 tablespoon Olive Oil
2 teaspoon Rosemary
1 teaspoon Sage
¼ teaspoon Pepper
Heat oven to 450f. Generously spray pan with non-stick cooking spray. Place tenderloins in pan - insert meat thermometer thickest part of one. Place vegetables around. Drizzle oil evenly over all. Sprinkle spices. Bake uncovered 40 mins until thermo 165 and vegetables are tender. Stir vegetables occasionally.
