4 tablespoon Lemon Juice
3 tablespoon Orange Juice
3 tablespoon Vegetable Oil
1 tablespoon Dijon Mustard
1 tablespoon Honey
1 teaspoon Orange Zest
1 dash Celery, Seeds
1 pound Shrimp, Cooked
1 cup Celery, Sliced
3 ounce Peas, Fresh
2 medium Oranges, Separated
1/3 cup Onion, Red Sliced
Lettuce, Leaves

In a small jar or bowl, combine juices, oil, mustard, honey, rind and celery seed; mix well. In a medium bowl, combine remaining ingredients except lettuce. Pour 1/2 cup dressing over shrimp mixture. Cover and marinate in refrigerator one hour. Serve on lettuce with additional dressing.
