Preheat oven to 425F
One 9" pie.
Prepare pastry: roll out half of dough and line a 9" pie plate. Trim and flute edge. Do not prick.
Mix together:
1/3 cup pre-sifted Monarch soft wheat flour
1/4 cup granulated sugar
1/2 tsp. cinnamon
Stir in:
2 1/2 cups sweetened applesauce
Turn into prepared pie shell.
Stir together:
1/4 cup heavy cream (could be 1/3 cup or 1/2 cup; old recipe smudged badly)
1/2 cup lightly packed brown sugar
2 tbsp. pre-sifted Monarch soft wheat flour
Pour over applesauce.
Bake in preheated 425F oven for 15 minutes, or until pastry is golden. Reduce heat to 350F and continue baking for 30 to 35 minutes longer, or until filling is bubbly.
Serve slightly warm with whipped cream.
