12 oz Spam 1 md Yellow pepper, chopped
2 c Cooked wild rice 1/2 c Raisins
1/2 c Chopped carrots Sherry chive vinaigrette
1/2 c Chopped pecans Lettuce cups, if desired

1/3 c Oil 1 tb Chopped parsely
2 tb Sherry 1/3 c Snipped chives
1 Clove garlic 1/4 ts Black pepper
6 servings
Combine all ingredients except lettuce cups. Cover and refrigerate four hours or overnight. Serve in lettuce cups if desired. For the vinaigrette: combine all ingredients in a food processor and blend until minced.
