1 pound margarine
2 pounds granulated sugar
7 ounces eggs (about 4 total)
4 teaspoons vanilla
1/2 cup milk
2 pounds whole wheat flour
4 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons salt
2 teaspoons ground nutmeg
4 tablespoons grated orange peel
4 ounces granulated sugar
2 teaspoons ground cinnamon
Yield: 8 dozen
1. Cream margarine and sugar for 5 minutes or until light and fluffy, using flat beater.
2. Add eggs, vanilla, and milk. Mix well.
3. Combine dry ingredients. Add gradually to creamed mixture. Blend well.
4. Combine 4 oz sugar and cinnamon.
5. Portion with No. 40 dipper 3x5 onto lightly greased or parchment-paper-lined 18x26-inch baking sheets.
6. Flatten slightly and sprinkle with sugar and cinnamon mixture.
7. Bake at 375°F for 8-10 minutes.
Notes: Cookies will be soft in center.
