4 ruby red grapefruits
1 fluid ounce Sweet sherry
2 ounces Brown sugar
Servings: 8
1. Cut each grapefruit in half (perpendicular to the segments), then section with a sharp knife, carefully removing any visible seeds.

2. Sprinkle the grapefruit halves with the sherry and sugar.

3. Arrange on a baking sheet and place under a preheated broiler. Cook briefly, only until well heated and the sugar caramelizes. Serve immediately alone or with ice cream or sherbet.
