1.25 lb potato - floury
4 oz bacon - diced, cooked
4 oz cheese - Trappist or Port Salut, grated
2 cl garlic - finely chopped
1 egg - beaten

=Peel and grate potatoes, pat as dry as possible with towels. Add together 1. Make into 8 small cakes, pressing with hand. Lay in flour, shake off excess, fry in fat until one side is brown and crisp. Turn over and lower heat, cooking about 20 minutes turning several more times. Serve immediately.
