Apple Ginger Punch

Sparkling, tart apple flavor goes well with ginger. So delicious!

4 tart medium cooking apples (such as Granny Smith), peeled and core removed, diced
1 cup water
1/4 cup brown sugar, packed
2 tsp. finely grated, peeled gingerroot
4 bottles of sparkling apple cider (with alcohol), 12oz each
3 cups ginger ale
12 ice cubes
12-16 thin slices of apple (with peel), core removed, garnish
Serves 14
Heat and stir first 4 ingredients in large saucepan on medium until mixture ust starts to boil.
Reduce to medium-low.
Cover.
Simmer for 10 to 15 minutes, stirring occasionally, until apple is softened.
Remove from heat.
Cool.
Transfer to blender.
Process until smooth.
Transfer to small punch bowl.
Cover.
Chill for at least 4 hours until cold.
Just before serving, add apple cider and ginger ale.
Stir gently.
Add ice cubes and apple slices.
Makes about 16 cups.

Variation (without alcohol):
Omit sparkling apple cider (with alcohol).
Use same amount of alcohol-free sparkling apple cider.
