Banana Bran Nut Loaf

Moist and delicious and so nutritious.

1/4 cup butter or hard margarine, softened
1/4 cup granulated sugar
1 large egg
1 cup all-bran cereal (100%)
1 1/2 cups mashed banana (3 large, or 4 medium)
1/2 cup chopped pecans or walnuts
1 tsp. vanilla
1 1/2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Makes 1 loaf
Cream butter and sugar in large bowl.
Beat in egg.
Add cereal, banana, pecans and vanilla.
Beat until smooth.
Stir flour, baking powder, baking soda and salt together in separate bowl.
Add.
Stir or beat on lowest speed just to moisten.
Turn into greased 9 x 5 x 3" loaf pan.
Bake in 350F oven for about 1 hour until an inserted wooden pick comes out clean.
Let stand for 15 minutes.
Turn out onto rack to cool.
