5 cups frozen Southern-style hash brown potatoes, thawed
1/2 cup chopped green bell pepper
1/4 cup chopped onion
1 Tbs. butter, melted
2 cups (8 oz.) shredded Cheddar cheese, divided
4 boneless, skinless chicken breast halves (5 oz. each)
1/2 cup barbecue sauce

Mix potatoes, peppers, onion, butter and 1 1/2 cups cheese in buttered 13”x9” baking pan. Coat chicken with barbecue sauce; place on top of potato mixture. Bake in preheated 400°F oven 40 minutes or until chicken is cooked through. Top with remaining 1/2 cup cheese. Continue baking 5 minutes or until cheese is melted.
