2 cups pastry flour
1 tsp. baking soda
1/2 tsp. salt
1 large orange
1 cup sugar (brown, white, or icing)
1/2 cup shortening
1 cup white sugar
2 eggs
1 cup light raisins
3/4 cup sour milk
In a large bowl, sift flour, salt, baking soda.
Set aside.
Squeeze juice from orange and add to the juice first amount of sugar.
Set aside.
Cut orange rind into eighths and put in blender along with shortening, white sugar and eggs.
Blend until orange rind is finely chopped.
Add sour milk and raisins and blend until raisins are chopped.
Put blender mixture into flour mixture and stir.
Pour batter into pan lined with waxed paper.
Bake @ 325F for 40 minutes.
When cake is done, spoon orange juice mixture on top and cool.
