1 1/2 cups All-Bran
1/4 cup oil
1/2 cup raisins
1/2 cup boiling water
1 egg, lightly beaten
1 cup buttermilk
1/4 cup molasses
1 cup plus 2 tablespoons whole wheat flour
2 teaspoons sugar
1 1/4 teaspoons baking soda
1/4 teaspoon salt
In a large bowl, combine the All-Bran, oil, and raisins, and pour the boiling water over them. Set the mixture aside to cool slightly. In a small bowl, combine the eggs, buttermilk, and molasses. Add this to the partially cooled cereal mixture. In another small bowl, combine the flour, sugar, baking soda, and salt. Add the flour mixture to the cereal mixture, stirring just enough to moisten. Cover with plastic wrap and let stand for 1 hour. Preheat oven to 400. Grease 12 muffin cups and fill with batter. Bake 20-25 minutes.
