1 3/4 fluid ounces Water
3 1/2 ounces Granulated sugar
1/4 teaspoon Ginger, ground
1 teaspoon Lemon juice
1 teaspoon Lemon zest
pinch Cream of tartar
Yield: 6 fluid ounces
1. Place all the ingredients in a heavy saucepan. Bring the mixture to a boil, stirring until the sugar dissolves. Continue boiling for 5 minutes until the mixture reduces into a light syrup.
2. Strain the glaze into a bowl and allow it to cool then refrigerate the glaze unit it is well chilled.
