5 lb country style spareribs 2.5 kg
1 lemon, unpeeled, thinly sliced 1
1 onion, thinly sliced 1
Barbeque Sauce
2 tbsp sugar 30 mL
1 tbsp salt 15 mL
1/4 tsp pepper 1 mL
2 tsp chili powder 10 mL
2 tsp curry powder 10 mL
1/4 tsp garlic salt 1 mL
1 tbsp grated lemon peel 15 mL
6 tbsp freshly squeezed lemon juice 90 mL
6 tbsp Worcestershire sauce 90 mL
2 cups ketchup 500 mL
4 cups water 1 L

Place ribs, side with meat up, in shallow roasting pan. Bake at 450°F/230°C for 45 minutes. Reduce heat to 350°F/180°C. Remove ribs from oven. Drain off fat. Top each rib with a slice of lemon and onion.

To make sauce, combine all ingredients, blending well. Bring to a boil and simmer briskly uncovered over medium heat for 20 minutes or until reduced to about 4 cups/1 L. Pour 3 cups/750 mL of sauce over ribs. Return to oven for 1-1/2 hours or until tender. Baste every 20 minutes, adding remaining sauce as needed.
