Cranberry Chicken Bake

1 broiler chicken - cut up 1
1/8 tsp pepper 0.5 mL
1/2 tsp salt 2 mL
1/4 cup vegetable oil 60 mL
1/2 cup onion, chopped 125 mL
1/4 cup celery, chopped 60 mL
3/4 cup whole cranberry sauce 175 mL
1/2 cup ketchup 125 mL
1 tbsp vinegar 15 mL
2 tbsp lemon juice 30 mL
1 tbsp brown sugar 15 mL
1 tbsp Worcestershire sauce 15 mL
1 tbsp prepared mustard 15 mL

Slowly brown chicken in oil. Season with salt and peper.

Place chicken in 12-x 7-x 2-in (30-x 15- x 5-cm) baking dish.

Saute onion and celery. Add remaining ingredients. Heat through, skim off fat. Pour sauce over chicken.

Bake, uncovered, in 325°F/160°C oven for 1-1/4 hours, or until done, basting 2 or 3 times during baking.
