Cream of Mushroom Soup

1/4 cup butter
1/2 cup chopped onion
1 lb. fresh mushrooms, sliced or chopped (I just used regular white)
1/4 cup flour
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder or 1 clove garlic, minced
2 cups chicken stock (I used bouillon, and omitted the salt called for)
1 cup milk
1 cup light or heavy cream

Put butter, onion, minced garlic and mushrooms in large pot. Saute until onion is soft and clear and mushrooms are tender. Sprinkle on flour, S & P, garlic powder if using. Mix in. Stir in chicken stock and milk. Heat and stir until it comes to a boil and thickens (at this point I used my hand blender to cream it up just a 'bit') Stir in cream. Stir. Serve. I added about 1/2 tsp of fresh thyme.
