1 tablespoon Corn Oil
½ cup Mushrooms, Sliced
4 tablespoon Onion, Coarsely Chopped
4 tablespoon Green Pepper, Coarsely Chopped
2 cup Tomatoes, Chopped
½ teaspoon Basil
¼ teaspoon Black Pepper
1 pound Cod, Cut In 1" or 2.5cm Cubes

In medium skillet, heat corn oil over medium heat. Add mushrooms, onion and bell pepper; stirring frequently, cook 3 minutes or until tender. Add tomatoes, basil and black pepper; stirring occasionally, cook 10 minutes or until sauce is thick. Place cod in 10x6x2-inch baking dish; spoon sauce over fish. Bake in 350f oven 20 minutes or until fish flakes easily.
