1 c yellow split pea flour(middle eastern)
1 c flour - a.p.
1 tsp cumin
1 tsp salt
0.5 tsp cayenne

2 Tbsp butter - clarified
1 Tbsp shortening - softened

0.66 c water

=Sift 1., cut in 2. (to cornmeal), add 3., knead briefly till smooth ~2-3mns. Form to ball, cover with damp cloth, let rest room temp. 30mns. Divide to walnut size, roll paper thin. Fry in 0.25in hot oil, ~2mns each side, till golden. Drain on towels, keep warm in 200F oven.
