5 oz milk
5 oz cream
1.5 Tbsp truffle oil

=Clean egg shells under running water, removing membrane, turn upside down in egg crate to drain. Heat milk and cream until just boiling. Turn on blender, pour in milk, cream then truffle oil, eggs and s&p. Strain, let sit several minutes and skim foam. Fill egg shells three quarters full. Put carton in bain marie to reach 2/3 up egg shells, bake 275Ffor 40 to 45 minutes.
