Healthy Oat And Raisin Cookies

2 cups all purpose or whole wheat flour
1 tsp. baking soda
2 cups oatmeal
3/4 cup butter or margarine
2 eggs
3/4 cup coconut
3/4 cup raisins or chocolate chips
1/2 tsp. salt
1/4 cup wheat germ
1 1/2 cups brown sugar
1 tsp. vanilla
1/2 cup nuts (optional)
Makes about 4 1/2 dozen
Mix all ingredients well and drop by spoonfuls onto greased cookie sheets.
Flatten slightly with hands or floured fork.
Bake at 350F for 12 minutes or until golden.
