Notes: Two 50-oz cans condensed beef or chicken consomme, diluted with 2 qt water, may be used.
4 1/4 quarts tomato juice (3 46-oz cans)
8 ounces chopped onions
6 celery stalks, cut in 1-inch pieces
3 bay leaves
12 whole cloves
1 teaspoon salt
1 tablespoon dry mustard
1 gallon consomme
Servings: 64
1. Add onions, celery, and seasonings to tomato juice. Simmer for about 15 minutes. Strain.
2. Add consomme to tomato mixture and reheat. Serve hot.
