Tonight's dinner - use this recipe as a roadmap, not the bible.
Everything is approximate and to taste.
Joe's Special
makes 2 generous servings
12 oz ground meat
½ med. onion, roughly chopped
½ lb mushrooms, thickly sliced
2 cloves garlic, minced
1 10 oz package frozen spinach, thawed, drained and squeezed dry
salt and pepper to taste
3 eggs, beaten
Tabasco (optional)

Brown the meat - if it's extra lean you're going to need some oil in
the pan. Throw in the onion, garlic and mushrooms - cook about 5
minutes more. Season to taste with salt and pepper. Now add the
spinach and stir for another 5 minutes.
Push the mixture to one side of the pan.
Beat the eggs and optional Tabasco together, add to the pan with a
little oil and stir as if you're making scrambled eggs. When the eggs
are almost completely set, stir them together with the meat mixture
and take off the heat.
Serve
