Makes 8 servings
Slowcook - 3 hours on high, 6 hours on low
1 boneless pork lon roast, about 3 lbs, trimmed & cut in 1/2 lengthways
2 large yellow peppers, seeded & sliced (I used 1 red & 1 yellow)
1 medium onion, thinly sliced
1 can (14.5 oz) diced tomatoes
1 tablespoon capers, drained
1 tablespoon cumin
1/2 teaspoon cinnamon
3 garlic cloves, sliced (I used 3 teaspoons prepared garlic from a jar)
1 tablespoon pickled sliced jalapenos
1/2 teaspoon salt
Place pork, peppers, onion, tomatoes, capers, cumin, cinnamon, garlic & jalapenos in slow cooker pot, stir to combine.
Cover & cook on low for 6 hrs, high for 3 hrs.
Remove pork from slow cooker & shred, discard any excess fat. Add pork back to slow cooker & add salt. (I left mine for another 30 mins at this point).
Serve with brown rice.
