Yields: 5&1/2 dozen
3/4 c.shortening
1c. sugar
3 large eggs
2 c.flour
3/4 tsp.baking soda
1/8 tsp.salt
2(3.4oz.)pkgs.instant lemon pudding mix
Beat shortening at medium speed with an electric mixer till creamy.Gradually add sugar,beating well.Add eggs,1 at a time,beating well after each addition.Combine flour & remaining 3 ingredients,gradually add to shortening mixture,beating well.Drop dough by rounded teaspoonfuls onto lightly greased baking sheets.Bake at 375 degrees for 8-9 minutes or till cookies are lightly browned.Cool 1 minute on baking sheets,remove to wire racks to cool completely,
