2 pounds granulated sugar
3 ounces cornstarch
1/2 teaspoon salt
2 quarts boiling water
2/3 cup lemon juice
1 ounce margarine (2 tbsp)
Yield: 3 quarts
1. Mix dry ingredients.

2. Add boiling water. Cook until clear.

3. Add lemon juice and margarine.



Notes: Serve hot with Christmas Pudding, Bread Pudding, or Rice Custard.

VARIATIONS:

Nutmeg Sauce. Omit lemon juice. Add 1 tsp nutmeg. Increase margarine to 4 oz.

Orange Sauce. Substitute orange juice for lemon juice. Add 1 tsp freshly grated orange peel.

Vanilla Sauce. Omit lemon juice and reduce sugar to 1 lb 4 oz. Add 2 Tbsp vanilla.
