It's fall - it's apple season. You can never make enough goodies using apples.
A very easy and delicious breakfast/brunch or late-night snack - a real tummy filler and tummy warmer after raking up those leaves!
In bowl, whisk together:
3/4 cup whole wheat flour
1/8 cup oats
2 tablespoons oat bran
1/2 teaspoon cinnamon
2 teaspoons baking powder
1/4 teaspoon salt
Stir in:
1/4 cup raisins
1/2 cup chopped apple
Gently stir in
1 cup apple juice - stir until completely moistened
Heat your griddle or large skillet. I use non-stick for this. Ladle onto hot griddle and cook until browned on the bottom; turn and cook other side.
These are plump and lumpy - and delicious served with warmed apple pie filling.
So if you are canning or freezing apple pie filling - save some for these.
If desired, place a dollop of whipped cream on warmed apple filling.
Also good with Maple.
