Nice and moist. Lots of orange throughout.
1/3 lb. gumdrop orange slices, cut up
3/4 cup chopped dates
1/8 cup all purpose flour
1/2 cup butter or hard margarine, softened
3/4 cup granulated sugar
2 large eggs
1 3/4 cups all purpose flour
2/3 cup fine coconut
1/2 tsp. baking soda
1/2 cup chopped pecans
1/4 tsp. salt
1/2 cup prepared orange juice
Makes 1 loaf
Toss first 3 ingredients together in small bowl.
Set aside.
Beat butter and sugar together in large bowl.
Beat in eggs, 1 at a time.
Stir next 5 ingredients together in separate bowl.
Add to egg mixture.
Stir.
Stir in orange juice then fruit mixture.
Pour into greased 9 x 5 x 3" loaf pan.
Bake in 350F oven for about 75 minutes until an inserted wooden pick comes out clean.
Cool on rack.
Remove from pan.
Wrap in plastic or foil.
Freeze up to 2 months or store in refrigerator 2 to 3 weeks.
