1½ pound Fish, Fillets
½ teaspoon Salt
1 dash Pepper
1 Egg
1 tablespoon Water
½ cup Flour
½ cup Bread Crumbs
2 tablespoon Vegetable Oil
If fish fillets are large, cut into 6 serving pieces. Sprinkle both sides of fish with salt and pepper. Beat egg and water until blended. Dip fish into egg, then coat with flour. Heat oil 1/8 inch in skillet until hot. Fry fish in hot oil over medium heat 8 minutes, carefully turning once until fish flakes easily with fork and is brown on both sides. Drain on paper towels.
