65 g flour - bread
5 g salt

2 Tbsp baking soda

=Mix 1. and 2. seperately, then combine. Knead 10mns til smooth. Let rise 2x, punch down, cut into eight pieces, set aside 10mns.
Roll into 24in lengths, form into pretzels, rest 10 mns.
Blanche 30 secs per side in 3., glaze with blanc, gros salt
450F ~12-14mns on cornmeal-dusted plaque
