1 1/2 cups quinoa
3 cups chicken broth
2 tsp olive oil
1/2 medium onion - diced
2 cups zuchinni - sliced
1 cup shredded FF cheese of choice
1 clove crushed garlic
1/2 tsp paprika
salt and pepper to taste
Cook quinoa in chicken broth until all liquid is absorbed. While quinoa is cooking, saute onion, garlic and zucchini in 2 tsp olive oil until cooked. Combine 3/4 cup cheese and spices in a large bowl. Add vegetables and quinoa and mix well. Press into an 8X8 casserole dish sprayed with cooking spray. Sprinkle with remaining 1/4 cup cheese. Bake at 350 for 20 minutes.
