16 oz fish (10oz. cooked) poached in wine

s&p, cayenne

2 bg spinach
2 oz shallot
nutmeg
=Make bechamel from 1., add 2., fold in 3. Bake @ 375F until golden brown and firm.
Saute spinach with shallot, add nutmeg. Season to taste. Roll in roulade.
Served with curry sauce.
