6 ounces onion, fine dice
1 ounce whole butter or bacon fat
3 apricots
3 apples (tart) or peaches, peeled
4 ounces granulated sugar
hot paprika, to taste
salt and white pepper, to taste

1. Sweat the onions in the butter or bacon fat without browning.
2. Slice the apricots and apples into thin, even pieces. Add the apples to the onions and cook for 1-2 minutes. Add the apricots.
3. Sprinkle the sugar over the fruits and cook, uncovered, over medium heat until tender. Season with paprika, salt and white pepper.
4. Serve warm as an accompaniment to roast pork.
